Makeup Mondays and Food Fridays. I think I've got a thing going on here!

So, this week - it will be chicken pasta salad topped with a poached egg. YUM.



Ingredients:

For the Sauce

1 tablespoon of Olive Oil/Coconut Oil
Half a red onion
3 medium sized tomatoes
1 garlic cube
1 ginger cube
1 green chilli (optional)
half a teaspoon of salt
half a cup of vege stock
boiled greens - spinach/kale, as much as you'd like. I just grabbed a handful of each. (use the water from here as your stock)
Boiled Chicken

Salad:

Round Lettuce
Cucumber
Poached Egg

Pasta:

Whole Wheat Pasta - A handful

Recipe:

1. In your pan of choice (preferably something non-stick), stick your olive oil in. Once that's heated up, pop your diced red onion in.
2. Whilst that is cooking, add your frozen garlic and ginger cubes.
3. Give it a stir, and then move on to your tomatoes. I chopped these up pretty messily, but it doesn't really matter, it is meant to be a slightly chunky sauce.
4. Add your vege stock, chilli and salt to the cooked mixture.
5. Add your boiled chicken and let it soak up the sauce for about 10 minutes.
6. Add the boiled greens and pasta, mix it up and set it aside.
7. On a plate, evenly layer the lettuce and cucumber. Add the pasta and top with your egg!

* I know my measurements are not even in proper measures, but I can reassure you that you'll know how much pasta you'll eat. Add as much or as less as you want.
