About a week ago, one of my close friends asked me to post a few healthy recipes, when I'm up for it.

I've been thinking and noting down things I've been eating so I could come up with a few recipes to post. Personally, I usually whip up something with whatever is in the house.

For this recipe in particular, I would have added a few more things (I'll put that as a side note below) to make the salad a bit more alive in taste.

Chicken Salad
Serving Size (2 Person)

Ingredients:

Cooked Chicken Breast 100g
Croutons (Sea Salt and Pepper) - 20g
Carrot Medium - 1/2 of Carrot Used
Pepper - 1/2 Pepper Used
Tomato Medium  - (1)
Lettuce - Half

The chicken I used was actually made by my mum. She makes a huge batch for the week, so we can use however much we want (it's ideal for me).

The chicken is basically marinated with chilli flakes, a teaspoon of natural yoghurt, a few drops of mint sauce and a tea spoon of paprika. (IT TASTES SO GOOODDD!!! As this is chicken breast, my mum cuts them in large cubes.

For the salad, I actually sliced 4 cubes into much smaller pieces.

Prior to that, I put in a colander the chopped lettuce, tomato, carrot and pepper and washed them over with cold water.

Following that I simply added the chicken and ready made croutons and was good to go.

For a bit more flavour, I topped the salad with a teaspoon of guacamole. You can do that or make your own dressing.
