SO much going on here.
Okay, so this dish is a bit busy, to say the least. I really enjoyed making this, and eating it too! It was my first time making it, and I'm really happy with how well it came out!

Ingredients:

1 Sea Bass - around 250g in weight.
1 Red Onion
1 Garlic Cube
1 Yellow Pepper
3 Baby Potatoes
Mint Leaves - handful
6 plum tomatoes
4 Sundried tomatoes
1 avocado
A handful of pine nuts
2/3 green chillis (it's the south asian in me that added these - optional)

Recipe

Preparing the veggies:

I cut the red onion in half and sliced the halves into thin half-moon slices.
The Yellow pepper I diced messily, and the baby potatoes I sliced in to thin whole slices, without cutting.
I thereafter cut the mint leaves in tiny pieces.

Preparing the fish:

Okay, I have to admit that I did need help with this. My dad descaled and cut of the fins, and a bit of the tail. I have no technique whatsoever in fish prep, but he did it all for me! Sorryyyy.

Okay, so here goes:

In a small pan, suited to fry an egg, I drizzled some olive oil so that the veggies don't stick. I then added the red onions and garlic cube. I let that cook for about 5 mins before adding the cubed yellow pepper, baby potatoes and mint leaves (and chilli).

On my griddle pan, I placed the 4 sun dried tomato pieces (they were cut into smaller pieces as well), alongside the pine nuts. I let that cook for about 5 mins.

I thereafter transferred all the veggies to the griddle and mixed it all together.

My fish was sliced in half - length ways, and I placed the above mix inside. I then placed it all back in the griddle and let it cook for about 15 mins.

I then put it all on a plate, sliced up half an avocado and walaah! It was done. I squeezed a bit of lemon juice on top as well, just to give it that tangy kick.  :)
