I recently decided to kind of try and make my own version of noodle soup, using rice noodles and veggies.

Ingredients needed:
Chicken Stock Cube
900 ml Water
1 clove garlic/A frozen cube of crushed garlic
A thumb size of root ginger/A frozen cube of crushed ginger
Half a Red Onion
Green Beans - a handful (so around 3/4 of a cup)
A handful of Spinach
1 and half green chilli
1 teaspoon of crushed chilli
2.5 tablespoons of reduced salt Soy Sauce
A sprinkle of salt
200g Chicken breast cubes
50g Rice Noodles
I started of with a pan of boiling water and my stock cube. I continuously stirred the water until the entire stock cube had dissolved.
Following that, I added my cube of garlic and ginger, and continuously stirred until both had kind of disintegrated within the stock.
I then diced my onion, sliced my chilli and added it to the mix. I let the mix simmer for a minute before adding the cubed chicken.
I let that boil for about 5 minutes, before adding the Soy Sauce, Spinach and Green beans. I left the green beans whole, however I cut the spinach into smaller pieces before adding it to the soup mix.
Letting the chicken and the soup mix for about 10 minutes on low heat, I then add the noodles. Rice noodles are pretty tricky to work with - you must continuously stir and seperate with a fork otherwise they stick together and it just goes all wrong.
